Riverina-raised chef favours local produce

Living in the Culcairn township, Buchhorn said his mum was a good cook and his dad –like many country dads, to be fair –“cooked the barbecue on high for a verylong time!”.

“I always liked cooking since I was a kid,” Buchhorn said.

“I have always had a fascination with reading cookbooks too.

“I still love reading books about food and watch docos on chefs all the time.

“Heston Blumenthal is greatand so is Gordon Ramsay’s food if you can getpast his style.”

Now head chef at Canvas Eatery in Albury, Buchhorn helps put contemporary menus together with owner/operator Tim Tehan, another Riverina-raised restaurateur who grew up on a Holbrook sheep station.

“I really enjoy the menu development; Tim is a really great resource to be able to bounce ideas off,” Buchhorn said.

Buchhorn said Riverina lamb had a special place in his repertoire and on the current menu, which coincided with Lambex in Albury this week.

“I love the sweetness of the lamb grown around here,” he said.

The former Billabong High School student completed his chef apprenticeship in 2011, having trainedat the SS&A Club, Smart Hospitality, Granata’s and Brady’sRailway Hotel.

Now based back at Culcairn, Buchhorn and his wife Jacinta are busy raising Matilda, 5, and Mason, 1.

He said his favourite style of food now was Middle Eastern.

“Middle Eastern flavourings have been my preference lately,” he said.

“I really like Spanish food too.

“Some of the flavour combinations are amazing; just simple and clean in their presentation.”
